Have you ever made Boiled Frosting?

Today is my DIL birthday. In her honor I plan to make a chocolate cake. I soon came to the realization that I do not have confectioners sugar to make the frosting with. Not a problem for me. I love to top a cake with boiled frosting. All it takes is a few ingredients, a few minutes on the stove and you have a delicious alternative to confectioner sugar based frostings or store bought. Here is the easy recipe: 1/2 cup granulated sugar 1/4 cup light corn syrup 2 tablespoons water 2 egg whites 1 teaspoon vanilla Mix sugar, corn syrup and water in saucepan. Cover and heat to rolling boil over medium heat. Uncover and goil to 242 degrees or to firm ball stage. In the meantime, beat egg whites in bowl until soft peaks form. Pour hot syrup slowly into egg whites, beat constantly on medium speed, add vanilla and beat on high speed until stiff peaks form. This will frost a 13x9 inch cake or 2 layers.

You can also make it chocolate flavored by folding in 1/4 cup sifted cocoa powder.

I've heard of boiled frosting, but never seen it made or how it was made. I have a problem with most cakes and frostings because of the corn starch in them. They add corn starch to baking powder and to powdered sugar. I do try to stay away from some corn syrup for fear of there being some corn protien in it, but i eat candy with it so I don't know why I worry so much!

Thanks for that my friend , it looks a brilliant recipe and so easy to do , and a lot less expensive I would imagine than the store bought ones , with the added advantage of knowing what is in it xx

Can you believe that I have never made frosting from scratch? I always keep a few cans of frosting here for when I make a cake. I have made cakes and brownies from scratch, but never the frosting. I'll copy this and give it a try!

I printed out the recipe and will try it. It sounds easy. I am trying to get more into cooking and baking lately. It's been sort of a "hobby" while I've been out of work!

I had forgotten all about boiled frosting. My mom used to make this when I was growing up, but I never knew how she used to do it. I guess I can make it myself now. Thanks for the memories, and the recipe.

I made this icing many times when my kids were little. I made many things from scratch back then. I am coming around to doing it again.

I remember helping my older sister make this kind of frosting when we were kids -- she did the cooking part, I was the muscle behind the manual egg beater... I remember it as being very rich but don't remember making a chocolate version. I guess you'd have to add cocoa, but how much?

You sift 1/4 cup of cocoa and fold it into the batter.

I have never made homemade frosting. I usually just buy it. Betty crocker is my favorite of all time, the whipped kind. Yum!!! Thank for the recipe though, maybe I will try making it home made sometime!!! It don't sound too hard.

Oh my goodness. Are you kidding? I am sitting here dumbfounded thinking about all the times I have made a special trip to the store to get a can of icing! It is that easy to make an icing? Geeze I feel dumb. Well hats off to you 'elusive'...I have copied and saved this post for future use! I will remember you fondly when I use the recipe and laugh about not having to run to the store!

Oh, WOW, Butter...Didn't even know you could make frosting like that; am definitely going to have to try it one of these days. CJ would probably love to help and we could make it together for his birthday cake in April. Thank you so much for posting that.

Oh, you sound like a wonderful and thoughtful mother-in-law making a cake from scratch for your daughter-in-law. I love chocolate cake . I have made boiled frosting only once and that was many years ago . I thought it was okay , but it tends to separate if kept too long . I have often thought of making it at other times , but my daughter said she didn't like the sound of it , so I just go with the regular frosting .Happy Birthday by the way to your daughter-in-law !
