thanks for the recipe here is another recipe for you Mashed Potato Candy This is great for using up left over mashed potatoes. Everyone loves it, especially kids. There are other potato candy recipes here, but none even close to this one that I've seen. My mom use to make this at Christmas all the time. This is very popular in the PA Dutch area. Prep and cook time is based on leftover mashed potatoes. Note: Instant potatoes don't work well. 1/4 cup mashed potatoes (1 sm. potato) 2 tablespoons milk 1 teaspoon vanilla 1 dash salt 1 (1 lb) box powdered sugar peanut butter Mix together all ingredients, except peanut butter. Add sugar until it's of dough consistency. Refrigerate to chill dough for an hour or two. Roll out onto powdered sugar dusted bread board or waxed paper. Spread peanut butter over potato dough. Roll it up like a jelly roll loaf. Refrigerate for about an hour, then slice into pinwheels. hope you like it

thank you for posting this recipe! I have fond memories of my young childhood and the neighbor lady who always gave me potato candy, I think hers was flavored with peanut butter. I recall it melted away in the mouth and was the most delightful treat.

My grandma made a similar recipe to this, except she spread the coconut/potato mixture into the bottom of a baking dish and then spread the chocolate on top of it. When the chocolate hardened, she cut it into squares. She also used almonds instead of walnuts- it makes it taste exactly like an Almond Joy candy bar.

Hmmm, that makes like a mashed porato candy bars. I also like almonds than walnuts, I can even use cashew for substitute.

That sounds so interesting! I've never thought of turning mashed potatoes into a sweet tasting dish. I've always considered mashed potatoes as a savory food. I'm compelled to try it, but I wonder how it would go over with the family.
