These Oatmeal Raisin Chews are from the recipe of Mrs Fields. These have been one of my favorites. 2 1/4 cups all-purpose flour, 1/2 tsp. baking soda, 1/4 tsp. salt, 1cup quick oats (not instant), 1 cup dark brown sugar, packed, 1/2 cup white sugar, 1 cup salted butter, softened, 2 Tbsp. honey, 2 tsp. pure vanilla extract, 2 large eggs, 1 1/2 cups (8oz) raisins, 1/2 cup (3oz) walnuts, chopped (optional) Yield: 3 dozen without walnuts 3 1/2 dozen with walnuts Preheat oven to 300 F In a medium bowl combine flour, soda, salt and oats. Mix well with wire wisk and set aside. In a large bowl blend sugars with electric mixer set at medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla and eggs. Mix at medium speed until light and fluffy. Add flour mixture, raisins and walnuts, and blend at low speed just until combined. Do not overmix. Drop by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart. Bake for 22-24 minutes or until cookies are light golden brown. Immediately transfer cookies with spatula to cool on flat surface. I hope you enjoy as much as we do. Have fun!
