Campfire Cooking Recipes

My family loves camping. We have a camper trailer that my SO & daughter restored a couple years ago that's just so comfortable and fun to camp with. The weather is starting to warm up in our corner of the world and I am looking forward to planning our first trip of the year soon.
I'm always looking for new recipes for our trips. It seems the kids are more willing to try new things if it's done over an open flame and eaten out on a picnic table than if it's at the kitchen table. Does any one have any tried & true favorite camping recipes to share? We have all the equipment one could possibly want for cooking over a fire or cooking over coals.

Here is a great recipe, if you have not tried it:
Wrap a banana and marshmallows in aluminum foil. Once you have your fire started, simply roast the wrapped bananas on the coals. In a few minutes, you'll have a tasty dessert everyone loves! For a twist, add chocolate and/or use other fruits.

OH we did this one. It is something I made LONG before I ever went camping. It is so yummy! I make it with chocolate.

Slice all your vegetables thinly, drizzle lightly with olive oil and wrap in foil and seal in a zip lock plastic bag, this can be placed on the edge of the campfire (with the plastic bag removed of course) and let it cook slowly for 25 to 35 minutes. Add a packet of 2 minute noodles and voila, a feast fit for a king

Take a piece of tin foil for each person. Cut up potato and onion and put a bit of butter in each one, season them to taste, and then close it up. We usually cook these on the grill, but they would also be great to cook in the coals. They are really good. You could also make the foil pouches of some sort of meat to go with them to complete your meal.

I am so happy that you posted this. I was planning on asking this type of question. We went camping for the first time last year and have already booked our spot for this summer. I am so excited!
Last year we ate out (diner, restaurant, fast food) once per day. The rest of the time it was pretty standard fare - hot dogs, hamburgers, corn on the cob, etc. I was just looking the other night to see if I could find anything. There are loads but I was too tired to really take a look.

On our last camping trip, my son made some bacon wrapped scallops threaded onto a skewer and cooked over the flame. The side dish we had to go with it was some cubed potatoes with green pepper and onion tossed with balsamic vinaigrette salad dressing,wrapped in heavyduty foil and cooked over the fire, turning several times.
