OK, I don't know how to spell it, and I don't measure, but it's pretty mistake-proof!
Calavacita (I think it means Zucchini)
1.5-2# chicken, poached and shredded
4-6 small zucchinis, chopped
1 small bag frozen corn
1 small onion, chopped
finely chopped jalepeno, optional-- however much you want
16oz can crushed tomatoes
2 cloves garlic, crushed
salt to taste
lots and lots of cumin-- I use about 1/4 of a jar (I use the stuff from Mexico, though, and it may be different strength)
Dump everything in a big pot, cover it, and cook on medium heat for a couple of hours. Done.

Ingredients: 1 chicken
2 tbsp olive oil
1 tbsp sabut jeera (cumin seeds)
1 tbsp jeera (cumin) powder
1 tbsp coriander powder
salt to taste
1 cup of water
Garnish
2 onions sliced finely
2 tbsp finely chopped coriander
1 tsp finely chopped green chillies
Method: Heat the oil, when hot add the sabut jeera and stir for I minute.
Then add the chicken, jeera powder, coriander powder, salt and pepper and mix well.
Add 1/2 cup of water, cover and cook over medium heat stirring occasionally till the chicken is done.
While the chicken is cooking, lightly saut?he onions in a little oil till white, add the chopped coriander, green chili, mix well and remove from heat.
Keep aside but do not cover.
When the chicken is done, add the garnish, spoon onto the dish and serve with a nice hot roti.

I have a Greek Sauce recipe that uses cumin in it but I can't find it off hand!
One thing I never realized before ... cumin isn't really "spicey" as much as it's a smokey flavor. I always thought it added heat or spice but it's more so a smokey flavor then heat! My buddy Rachael Ray told me that! LOL

Here is my contribution to Cumin, this is a great recipe that I love.
Lori's Texas Chili Recipe
1 pound ground beef (or ground turkey, if you are trying to cut calories)
1 onion, shopped or 2 tbl spoons instant minced onion
1/2 teaspoon of garlic powder
1 to 1-1/2 tsp chili powder
2-1/1 tsp ground cumin
1 (28 oz) can crushed tomatoes
1 (6 oz) can tomato paste
*you can add beans at this point, although I omit them)
** 1 (30 oz can chili beans
Brown turkey in onion over medium-high heat, stirring to break up meat, until lightly browned, 5 to 10 minutes.
Stir in all remaining ingredients. Heat to boiling. Reduce heat to medium-low and simmer, uncovered for 10 to 15 minutes.
I serve this over corn bread with cheese sprinkled on top.

Cumin is not my favorite spice in the world. But I do like putting it in a few of the dishes I prepare for dinner for both me & my other half.
I enclosed one of my favorite recipes where cumin is one of the ingredients which helps to make this meal even more delicious! I recommend anyone trying this as I know around here we just find it to be rather delicious indeed! . .
"Three Bean Chili."
Ingredients are as follows:
- 1 lb. of ground beef
- 1/2 of a teaspoon of cumin
- 1 cup of chopped onion
- 1/2 of a cup of carrot
- 1 garlic clove minced
- 1 tablespoon of chili powder
- 14 ounce can of black beans drained
- 19 ounces of canned romano beans with the liquid
- 14 ounces of kidney beans, with the liquid
- 28 ounces of crushed tomatoes
- 4 ounces of canned dice green chiles, drained
For the garnish:
- Take chopped cilantro & put on the very top.
Directions are as follows:
- First take the ground beef & scramble fry the beef, the onion, along with the carrot, the garlic in a skillet with 2 tablespoons of oil. Cook until the beef is browned. Then drain the excess fat in pan.
- Then add the chili powder & of course the famous cumin. Stir this very well. And remove from the heat.
- Then combine the next five ingredients in a dutch oven. Then add the ground beef mixture & stir very well.
- Cover this & simmer it for 1 hour, making sure to stir quite often. Then garnish with cilantro & serve & ENJOY! xx

I won't post the recipe here, mainly because everyone already has a favorite of this one anyway. But it's CHILI. My dad got me started on adding Cumin to it a few years ago. He said it's not chili without cumin in it. And you know what?? He's right!! It's delicious in chili :)
