I´ve had several people wanting to know how I make bread, so here is the recipe for all to see! I make it with half white, half brown flour so that it is fairly healthy, but not too heavy. Half-Half Bread - Makes 3 large loaves 2 cups hot milk 2 cups water 4 T. oil 3 T. sugar 1 T. salt 1/4 cup very warm water 2 T. dry yeast 6 c. brown flour 6 c. white flour In a small bowl, mix warm water and yeast until dissolved, let sit for five minutes to activate. In a separate, large bowl, mix all remaining ingredients, except the flour. Add yeast mixture and stir to blend well. Add two cups of each kind of flour and stir. Alternate adding one cup of each kind of flour until the dough forms a blob in the bowl. Tip the dough out onto a floured surface and begin to knead, adding more flour if necessary. Knead for about 5 minutes (though longer is better!) and put into an oiled bowl. Cover and leave in a warm place to let rise for about an hour or until doubled in size. Punch the dough down again and knead a little before separating into 3 portions. Form into loaves, place in greased loaf pans and let rise again for about an hour. Bake in a preheated 450º oven for about 30 minutes or until the loaves sound hollow when tapped. This recipe is based on one from the Joy of Cooking, although I altered it to make it faster and easier. :)

You have wonderful timing! I have been wanting some homemade bread lately but the only wheat recipe I have makes extremely heavy bread. This sounds like it will be just the right mix. Do you prefer a certain type of loaf pan...glass, metal, stoneware?
