What's your favorite dipping sauce?

I originally wanted to ask about favorite condiments but a quick google search led me to the term dipping sauce. Dipping sauce or "sawsawan" is common among Filipino food (meals, merienda and "pulutan"). Kabayan, can you share what your favorite "sawsawan" is? On what food do you normally use your fave sawsawan. Mine is vinegar (preferably coconut vinegar or "sukang sasa") with red hot chili pepper ("siling labuyo"). I love using it with / for chicharon, liempo, lumpiang gulay and grilled fish. Second honors go to toyo-mansi (soy sauce with calamansi).

My favorite sawsawan is soysauce with vinegar and kalamansi. I usually dip fried fish on it or bagoong. Or even grilled eggplant. Ahh..am salivating right now and getting hungry imagining Filipino food.

Yup! soy sauce with vinegar and kalamansi is another good variation of sawsawan. Goes well with fried / grilled tilapia and grilled bangus. Believe me, you are not the only one salivating (read: craving) for Pinoy food. Time for you to prepare a vacation to the Philippines soon to indulge yourself in the food with your favorite sawsawan.

I like this combo too. I think I have tried this already on the famous chicken inasal of Bacolod. Yummy.

I prefer "PINAKURAT",it's actually a vinegar made of chilis,vinegar from sugar cane juice and secret spices. you can only buy this in mindanao provinces.the flavor is great that you can almost want to drink it than serve it as a condiment.I also love "BASI"or sukang ilokano from ilocos region..simple and unique to its taste than those of local vinegar in the bottle.this vinegar is known associated to food such as lechon ilokano(BAGNET) or pinaputok na isda(STEAM FISH)..but the great deal is to use it for KILAWIN or vinegared fish.

Thanks for your very mouth-watering descriptions of these native Filipino condiments. I will look for PINAKURAT when I get the chance to travel to Mindanao. Problem is, I don't think they allow one to bring bottled liquids on the plane. I recall one time when airport security in Butuan asked me to leave behind a bottle of vinegar in my baggage as I was about to board a plane to Manila.

Whenever I got a chance to dine at Mann Hann, I ordered for fried squid heads, served with soy sauce, vinegar with chili and then I ask for a HOISIN SAUCE... nice combination... But when I have anything grilled... I make a mixture of soy sauce (toyo), ketchup and then add crushed red chili.. hmmm! try it!!

Thanks for sharing your fave dipping sauce / condiment. I have not yet tried mixing ketchup with other condiments such as soy sauce or crushed chili. Maybe I'll try that combination for my grilled pork chop. By the way, am not a big fan of hot sauce (served with pizza on fast foods).
