Red Skin Potatoes

Do any of ya'll have some good recipes for redskin potatoes? Thanks ahead of time!

I do-it is pretty basic, but still very delicious. Take a large saucepan and place potatoes in it. (Make sure each potato touches the bottom, none of them are stacked.) Add enough water to fill the bottom of the pan, but not to fully cover the potatoes, probably about 1 inch or so. Bring to a boil. Reduce heat, cover, and simmer on medium low heat for about 7-10 minutes, or until potatoes are very tender. Drain. Transfer to a serving bowl and butter and parsley. (A little salt and pepper too, if you'd like.) Mix thoroughly. Serve. Enjoy!

I'll have to try it. It does sound pretty simple, and if its got red skin potatoes in it, I know it has to be delicious. Man, I love those things! :-)

If you are not cooking in a nonstick saucepan, make sure to roll potatoes around the pan a few times to make sure they don't stick. Even with the water, the skins can burn at the bottom if they are stuck in one spot the whole cooking time.

Mixing the potatoes and oil to-gether before frying makes so much sense, now that I've read it. And,Zingo. No more stuck to the pan potatoes for me.

Am Italian, I would willingly answer you, but I have never seen the red potatoes, from us am not there, but have me incuriosita, must enquire. But is simil a normal potatos???

What to do with white potates. Let me see , boil and mash them with milk or cream add some garlic or parsley, or basil. You can add some cheddar cheese too. Scalloped potatoes-Sliced and layer with sliced onions covered with dotted butter sprinkle with flour and covered with milk oe cream bake in the oven at 350 degrees for about 45 min or until tender. soup-boil potatoes with onions celery and carrots. When fully cooked mash add some milk or cream to the consistancy you like. Add some parsely or basil to taste. Baked and twice baked are very good. top with butter or sour cream. also you use chili as a topping as well as broccoli with lots of cheese. Sliced and seasoned with your favorit seasoning and fried in bacon or hamburger greaase. I like mine with lots of black pepper. large cubed potatoes lightly covered with olive oil and your favorite seasonings covered with foil and baked at 350 until tender. There's the old stand by french fries.

Here is a great potato salad recipe used with red potoatoes, I love red potatoes too ... Creamy Potato Salad 4 small red potatoes, cubed 1/4 cup water 1/3 cup mayonnaise 1 hard-cooked egg, chopped 2 tablespoons chopped celery 2 tablespoons chopped carrot 2 tablespoons chopped red onion 2 teaspoons sweet pickle relish 1/8 teaspoon salt 1/8 teaspoon pepper Place the potatoes in a microwave-safe bowl; add water. Cover and microwave on high for 4-5 minutes or until tender; drain and rinse in cold water. In a bowl, combine the remaining ingredients. Add potatoes and gently toss to coat. Cover and refrigerate until chilled.

what's the difference of red skin potatoes to white skin? we have red potatoes here but we call it sweet potatoes since they are sweet. i'm not sure if the red skinned potatoes we both talking about are the same...

Red Skinned Potato Salad SUBMITTED BY: Donna "This creamy salad is made with red potatoes, which give this dish--chock full of melt-in-your-mouth bacon, bits of hard boiled egg, crunchy celery and spicy onion--a delectable, firm texture." INGREDIENTS 2 pounds clean, scrubbed new red potatoes 6 eggs 1 pound bacon 1 onion, finely chopped 1 stalk celery, finely chopped 2 cups mayonnaise salt and pepper to taste DIRECTIONS Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon, onion and celery. I always make red potatoes, by cutting off the spots that have dents in them and cutting them up in dices, boiling them and instead of mashing them I just stir them, so there are chunks in it, and the some of the red skin is mixed in and I add some butter and garlic. It is really yummy.

Bake in oven drizzled with olive oil and spices!!
