Olive Oil Braised Potatoes

I make these at my restaurant, and people are always raving about them, thought you all might like them too.
2 medium Idaho potatoes, washed, skin on, and cut into 1/2 inch slices
Gray salt and fresh ground black pepper
1 cup extra virgin olive oil
6 sprigs fresh thyme
4 garlic cloves
Preheat the grill. Also preheat your oven to 325 degrees.
Put the potato slices on the hot grill and cook about 2 minutes on each side to mark them. Remove from the grill and place in a single layer on a baking sheet. Season both sides with salt and pepper. Add enough olive oil to reach 1/3 up the sides of the potatoes. Turn potatoes over to coat completely with the oil. Scatter the thyme and garlic cloves over the potatoes, sprinkle with a little more salt. Place in the oven.
After about 15 or 20 minutes, the potatoes will be tender. Remove from the oven and let them cool in the oil. Serve at room temperature.
I would also like to add that using a high quality oil increases the flavor of the potatoes.

That sounds wonderful. We use alot of potatoes at our home. We are country folks and potatoes is just an everyday food. We raise our own potatoes. Do you own a restaurant or are you the chef there? I love your recipes. Thanks for sharing them.

This is a good recipe.If you would like a change you can use amy kind of dressing instead of the oil.I like blue cheese or ranch in this recipe.
