In the mood for Chocolate Low Carb Cheesecake?

Ingredients
1 lb. (2 - 8 oz. packages) cream cheese
4 oz. dark chocolate, finely chopped
1 tsp. cocoa
3 packets aspartame (such as Nutra Sweet®)
3/4 tsp. liquid stevia
3 tsp. vanilla extract
3 eggs
3 C sour cream
Procedure
Preheat oven to 375° F.
Finely chop chocolate in a food processor or using a knife. Set aside.
In a large bowl, beat cream cheese and sweeteners until smooth, add eggs one at a time, beating after each addition. Add vanilla and finely chopped chocolate, then beat in the sour cream just until blended. Divide batter between 10 small ramekins.
Prepare a "Bain Marie" by placing the cups in a baking dish, then filling the dish 3/4 the way up the sides of the cups, with warm water. Bake for 50 minutes, then turn off oven and don't open the door for another hour.
Remove from oven, cool and then chill completely before serving
Makes 10 individual cheesecakes

Sorry, not me..
If I am going to eat cheesecake then it will be the real thing.
It is sort of like would I like low carb, diet ice cream..Huh!
If I'm going to eat ice cream I like to go for it and get the kind that will clog my arteries and increase my chances of an early demise.
Well, not really..lol
I only have deserts as a treat. I'm one of those people who can eat all he wants and still stay my usual 150 pounds. I don't know why, it just is that way.
Being an athlete however, I do try and avoid the simple carbs, but when I do cheat ....low anything is not in the equation.

I don't think it did. Just found it while looking around at other things. Just eat a proper portion. (^__^)

I am supposed to be on a low carb diet. If I was willing and able to stay on a low card diet properly, which I'm not, this recipe would be perfect for me. Trouble is, with my sweet tooth weakness, and cooking carb foods for the rest of the family, I think I would just be eating more fat/ sugar with this DELICIOUS recipe.

I think this is a dangerously tempting recipe. How can you keep from eating all 10. I would have to double or triple the recipe.
I want to be able to get no sugar candy or make it. I could really use some good ideas for that.

Yes, I´m nearly always in the mood for sweet things. I love the ingredients, but instead of using aspartame I will use a bit more Stevia. I´ve been using this natural sweetener for quite some time now and even though I don´t have to worry about my weight I use it for health reasons.
Thanks for a very tempting, healthy recipe. I can´t wait to give it a try.

Stevia would work just be careful since it could leave an aftertaste that is not wanted in a nice dessert. thanks for responding.

That sounds fantastic. I'm always up for low-carb. Although, I do have this theory that all carb and no fat may also work.

Oh thanks willow! I really love cheesecake, but I'm so afraid of the calories. That sometimes I can't enjoy eating cheese cake. Thank you very much for the recipe. Keep on posting low carb recipes.! (^^,)
