Need help with Easter dinner!!!!

My mother-in-laaw does every holiday. Last year she told me I could have Easter. Meaning I can make Easter dinner for my husbands family. The ony catch, my father-in-law can't eat anything with onions in it and my sister-in-law is a vegetarian. So I have to come up with a meal that will have something for everyone. If you have any great recipes please post. I would like to blow their socks off. I would love to have my mother-in-law walk in to my house and be amazed at what I did. Thanks in advance.

Roasted Easter Ham

"Fresh roasted ham is coated with an easy glaze of mustard and maple syrup. Great for an Easter buffet."
INGREDIENTS
1 (5 pound) bone-in ham
1/3 cup prepared yellow mustard
1/3 cup maple syrup
2 tablespoons brown sugar
2 teaspoons onion powder
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Rinse the ham and pat dry with paper towels.
Place the ham in a shallow roasting pan. In a small bowl, mix together the mustard, maple syrup, brown sugar and onion powder. Coat the ham entirely with the glaze using a spoon or brush.
Roast the ham uncovered for 2 hours in the preheated oven, or until heated through. Let it rest for about 15 minutes before carving to keep it from drying out.

I love this cheesy potato recipe and it is always a huge hit, I usually cook thanksgiving and christmas dinners. And it is very easy.
2 bags of frozen hashbrown potatoes, the square ones.
2 cans of cream of potato soup
shredded cheddar cheese
8 oz sour cream
mix all together in a casserole dish, and bake at 350 for about 45 min.
Also, this fruit salad is always a huge hit, but you have to make the night before
can of pears
can of peaches
can of pineapple tidbits
cut up apple
cut up banana
1 box instant vanilla pudding (dont cook it just add it like it is)
Dont drain any of the fruit the juices are the best part.
Mix all together, in bowl, refrigerate overnight. It is an awesome fruit salad.
