Lemon Spritz Squares

1 ( 1 pound 1.5 ounce) pkg. dry sugar cookie mix
4 ozs. cream cheese, softened
1 to 1 1/4 cups all purpose flour
1/2 to 3/4 tsp. lemon extract
2 eggs
1 tbsp. grated lemon zest
flour, for dusting work surface
powdered sugar for garnishing
Preheat oven to 350 degrees.
In the bowl of an electric mixer, combine the sugar cookie mix and cream cheese. Add the flour in 3 parts. Add eggs and lemon extract, and mix until just combined. Fold in the lemon zest.
On a lightly floured surface, roll out the dough to a 12x14 inch rectangle. Using a fluffed pastry cutter, cut dough into 2 inch squares.
Place cut-outs 1 inch apart onto ungreased cookie sheets. Freeze 10 minutes. Bake 10 to 12 minutes, until bottoms are golden brown and tops are set. Cool completely on a cooling rack. Dust with powdered sugar.

I love lemon and these sound so good. I will definately be making them for myself. I wont worry about anyone else when it comes to lemon, everyone is on their own. They only get some if they can grab them before I hide them.
