Fruity Oatmeal Cookies

This recipe makes 24 2 inch cookies.
Healthy note: 3 cookies= 1 fruit serving, 1/2 whole grains serving and some iron and high fiber.:)
Canola oil spray
10 dates, pitted
6 tablespoons fruit juice concentrate
2 tablespoons canola oil
1 1/2 cups rolled oats
1 cup raisins
1/4 to 1/2 chopped nuts (I like to use pecans)
1/4 to 1/2 teaspoon ground cinnamon
1 large egg white
Preheat oven to 350 F. Coat a nonsticking baking sheet with the cooking spray. Combine the dates and the juice concentrate in a small saucepan. Bring to a simmer over low heat, continue to simmer until the fruit has softened, about 15 minutes. Place the mixture in a blender and puree. Pour into a mixing bowl, add the oil, oats, raisins, nuts, and cinnamon and stir to mix.
In a separate bowl, lightly beat egg white. Fold it gently into the cookie mixture. Drop the batter by the tablespoon onto the prepared baking sheet, leaving 2 inches between cookies.
Bake 10-12 minutes.
