How to tell if the man in your life is being true and truthful with his feelings

How as a woman do you know if the man in your life is being truthful with you about his feelings for you? Also about all the other things that seem to come out of his mouth? With my daughter I can tell you immediatley if she is lying, because she has ever since she was about 2 yrs old if she did something wrong and lied about it she always got a little gleam in her eye and a cut little half smile she always tries to hide and now she is 20 and still does the same. But I know for a fact my husband is lying from hearing him on the phone when he thinks I cant hear him, so if he is not around and I ask him something how can I tell if he is being truthful or lying?
