Favorite Restaurant?

I love Portland's huge number of local non-chain restaurants. What are your favorites? What makes them great?
My favorites are Genie's Cafe, The Montage, Abou Karim, and DeNicola's.

My favorites so far are Golden Jade, Sambi's, and Giant Burger.
Golden Jade is the best Chinese food I have ever had. Their hot and sour soup is amazing, and I have yet to order an entree that wasn't tasty.
Sambi's is a Japanese restaurant, and it's the first place that convinced me that sushi is actually delicious. Their Donburi is also excellent, along with their gyoza and miso soup.
Giant Burger is exactly what it sounds like, a burger joint that serves giant burgers. I keep going back because while the fare may be simple, it's so well prepared and well, giant!
I second The Montage, I have only been there once but the macaroni and cheese was the best I've ever had. And the gator bites!

Genie's has the best eggs benedict I've ever had (with spinach!) plus white-chocolate hazelnut pancakes. It's always crowded but they have serve-yourself coffee and people stand around outside drinking coffee together waiting for a table. Abou Karim is a Lebanese restaurant downtown with great baba ganoosh and eggplant stew and lamb-stuffed grape leaves, and my friend Dan plays jazz there most Friday nights. DeNicola's is a little Italian place with a nice quiet romantic atmosphere.
