When having special guests for dinner what is one fail proof meal you like to cook? Do you ask guests what they like in advance?

I would not like to ask my guests what they would like but would prefer to know about it. I always make it a point to prepare 2 veg and 2 non veg dishes so that there are not surprises. Mostly all the dishes that I prepare have been fail proof (touch wood) but the one which I love to prepare is Zeera Chicken which is easy and quick.
Ingredients: 1 chicken
2 tbsp olive oil
1 tbsp sabut jeera (cumin seeds)
1 tbsp jeera (cumin) powder
1 tbsp coriander powder
salt to taste
1 cup of water
Garnish
2 onions sliced finely
2 tbsp finely chopped coriander
1 tsp finely chopped green chillies
Method: Heat the oil, when hot add the sabut jeera and stir for I minute.
Then add the chicken, jeera powder, coriander powder, salt and pepper and mix well.
Add 1/2 cup of water, cover and cook over medium heat stirring occasionally till the chicken is done.
While the chicken is cooking, lightly saut?he onions in a little oil till white, add the chopped coriander, green chili, mix well and remove from heat.
Keep aside but do not cover.
When the chicken is done, add the garnish, spoon onto the dish and serve with a nice hot roti.

hmmm... if they're special guests, asking what they'd like would be a big no-no. you should make something special for them. start with something you think they would like to have.
