The Desert Rose Cookie

2 cups ground almonds
1 cup sugar
1 lemon, zested
1 tsp. baking powder
1 tsp. unsalted butter, room temperature
1 cup powdered sugar, for dusting
In a large bowl, mix all the ingredients together except for the powdered sugar. Roll the dough into 1 inch balls and place on a cookie sheet. Press down with a knife tomake slits like a triangle in the cookie. Using the end of the knife,press the center of the cookie downward. Bake for 8 to 10 minutes. Let cool and then dust with powdered sugar.

Change to: dozen US Metric
1 cup butter
1 cup vegetable oil
1 cup white sugar
1 cup brown sugar
1 egg
1 cup crushed corn flakes
1 cup chopped nuts (I use walnuts or pecans)
1 cup quick-cooking oatmeal
4 cups flour, decrease to 3 1/2 cups for a chewier cookie
1 tablespoon baking soda
1/2 teaspoon salt
2 teaspoons vanilla extract
Preheat oven to 325.
Cream butter, sugars and egg.
Add oil.
Mix in dry ingredients.
Form dough into walnut sized balls.
Place on cookie sheet and flatten with a fork dipped in water.
Bake for 10- 12 minutes.
Cool on pan for a minute or two, then transfer to a rack to cook.

Butter Cookies
INGREDIENTS
1 cup butter
1 cup white sugar
1 egg
2 2/3 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons vanilla extract
DIRECTIONS
In a large bowl, cream together the butter and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Combine the flour and salt; stir into the sugar mixture. Cover dough, and chill for at least one hour. Chill cookie sheets.
Preheat oven to 400 degrees F (200 degrees C). Press dough out onto ungreased, chilled cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.

Oh Wow another recipe a diabetic can eat just by using Splenda instead of sugar.
Thanks Osterode, I will send this to my 2 brothers and my sister. We all are always looking for new recipes we can enjoy without the fear of raising our glucose levels.
With all the recipes I get from all the members here at myLot I will never have to go without desert again.

This sounds so easy to make and yet so yummy. It sounds like it would be jsut a bit tart so it would great for a light evening treat when watching TV. wonder how it got its name. That is odd for a cookie to be called Desert Rose.
