Cowboy Cookies

1 cup shortening
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla extract
2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
2 cups rolled oats
1/2 cup chopped pecans
1 (6oz) package chocolate chips
1/2 cup shredded coconut
Preheat your oven to 350 degrees.
In a large bowl of an electric mixer, cream the shortening, granulated sugar,and brown sugar. Add eggs and the vanilla and beat until well combined. Stir in the flour,baking soda,salt,and baking powder.Add oats,nuts,chocolate chips, and coconut, mix until combined. Spoon cookie dough onto greased foil lined cookie sheet.Bake for 8 to 10 minutes. Transfer cookies to wire racks to cool completely.

Wow Michelle, That sounds good. You make alot of cookies dont you. Are you really a pastry chief? You do have wonderful pastry recipes. I would love to have a recipe for some simple eclairs that are also tasty.

Chocolate Cowboy Cookies
27 min 15 min prep
Change to: cookies US Metric
3/4 cup flour
1/4 cup cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup margarine or shortening
1/2 cup white sugar
1/2 cup brown sugar, firmly packed
1 large egg
1 cup quick-cooking oats
1/2 teaspoon vanilla
1 cup chocolate chips
1/2 cup chopped nuts (optional)
Sift together dry ingredients; set aside.
Blend together margarine (or shortening) and sugars.
Add egg & beat until light & fluffy then stir in vanilla.
Combine with dry ingredients & mix well.
Add remaining ingredients& mix well.
Drop by teaspoon onto greased or parchment-lined cookie sheets and bake in preheated 350°F oven for 12 minutes.
Allow a few minutes longer if you prefer crisp cookies.
