I luv me some avacadoes, Yum:-) Try making some Cod fish, red onions,avacadoes, with a little salt & EVO, & you got yourself a great salad.

try this.it is avocado pineapple salsa.1 fresh pineapple,peeled ans diced;1 medium ripe avocado,peeled and diced;1/3 cup finely chopped red onion;5 lovage or celery leaves,finely chopped;1 jalapeno pepper,seeded and chopped;3 tablespoons lime juice;1 teaspoon grated lime peel;1/4 teaspoon salt;tortilla chips.In a bowl combine first 8 ingredients.Cover and refrigerate for at least 30 minutes.Serve with chips.

I cut them up and put them on top of chef salads or any salad, you can mash them up stir in some cold picante sauce and serve it with chips or spread on a tortilla, you can mash them stir in some mayonaise and salt and pepper to taste and spread it on a tortilla, but my favorite is avacado enchiladas you just add it to any enchilada recipe- mash them up and insert into the enchilada before cooking , my kids like to make avacado sandwiches with tomato slices and avacado on bread. Hope this has helped some....
