My mom is diabetic also and she loves sweets. She mostly eats sugar free Jello and sugar free Jello puddings. Although it's not a recipe, they really help her out when she craves sweets.

Sorry to hear that your dad lost a foot due to diabetic.
Diabetic patients have systemetic life in theiir eating habit and all other works in daily ife. so they lead like normal man with some control instruction and thats good.
Salads and vegetables are the most occupied items of their menu. can take sweet with minimum no keeping pace with their bloodsugar status. keep up excercise routinely. thats enogh for leading a nrmal life.

I'm in the U.S. but maybe you have the boxes in Canada. The instant pudding is real easy to make. All you need is milk, mix it and it's ready. Over here it is located in the baking aisle at the grocery store.

you can try this
DIABETIC APPLE JELLY
2 env. unflavored gelatin
2 c. unsweetened apple juice
Artificial sweetener to taste
2 tbsp. lemon juice
Yellow food coloring
Sterilize 2 half-pint jars by covering with water and boiling for 15
minutes. Soften gelatin in 1 cup apple juice. Heat to a boil the other
cup of apple juice. Remove from heat. Add juice with softened
gelatin. Add lemon juice. Bring to full boil and cook about 2 minutes.
Remove from heat and add food coloring and sweetener to taste. Pour
into sterile half-pint jars, seal, and cool. Store in refrigerator. Makes
2 half-pints.
DIABETIC FRUIT BARS
1 c. chopped dates
1/2 chopped dried apricots
1/2 c. walnuts
1 1/2 tsp. baking powder
1/2 c. butter
1 1/3 c. rolled oats
1/4 c. oil
2 eggs
1 tsp. vanilla
1 c. flour
1 tsp. cinnamon
In saucepan, melt oil and butter, add dates and apricots. Remove from heat and beat in egg and vanilla. Combine dry ingredients and mix with rest of mixture. Bake in 9 x 13 inch pan for 20 minutes at 350 degrees.

You can try this chocolate strawberry
2 cups cold milk
1 (4 ounce) package instant chocolate pudding mix
1 (10 ounce) package frozen sweetened strawberries, thawed
1 cup whipping cream
1/4 cup confectioners' sugar
sliced fresh strawberries (to garnish)
Beat milk and pudding mix till thick and smooth and set aside.
Drain strawberries and place berries in a blender.
Cover and process until smooth.
In a mixing bowl, beat cream and sugar until stiff peaks form.
Gently fold in strawberry puree.
Divide half of the chocolate pudding among four dessert dishes.
Top with half the strawberry mixture.
Repeat layers and garnish with strawberry slices.

Pumpkin Parfait

"This easy parfait would be welcome on any holiday menu. Preparation time is 15 minutes. This recipe is from The WEBB Cooks, articles and recipes by Robyn Webb, courtesy of the American Diabetes Association."
INGREDIENTS
1 cup pumpkin puree
1 (1 ounce) package instant sugar-free vanilla pudding mix
1 teaspoon pumpkin pie spice
1 cup evaporated skim milk
1 cup skim milk
DIRECTIONS
In a mixing bowl, combine the pumpkin puree, vanilla pudding mix, pumpkin pie spice, evaporated milk and skim milk. Blend together until smooth; place in parfait glasses and chill until set.
