Last night we had the last of our leftover corned beef and cabbage stew that I made for St. Patrick's day. Tonight I am making Italian Manicotti. It is very good! I don't have the recipe on me at the moment, but basically you get a box of manicotti shells and cook them. When they are done, you rinse them off and dry them with paper towels. You stuff them with a mixture of ricotta cheese, mozarella cheese, garlic powder, and basil. Then you put them in a 13 x 9 pan and pour a jar of spaghetti sauce on top, and bake it at 350 degrees for about 15 minutes. Then you sprinkle shredded parmesan and grated mozarella on top and bake for an additional 10 minutes. I've made it a lot and it is one of my husband's favorites!

I fixed homemade egg rolls for supper. They had pork, cabbage, carrot and onion in it. Plus odd and end spices. We also had fried rice. It was great. Hubby thinks it was my best attempt ever.

We had meatloaf and macaroni and cheese. We usually don't have dessert after dinner cause we are full. But we do have a snack in the evening most nights.

Blueberry muffins. I know. But, we're broke and that's about as good as it gets. LOL Gotta love Friday pay days. :)

I had chicken, potato wedge and baked beans, with a strawberry corneto thrown in too. Nice and healthy!
