I also loved mashed potatoes. When I make them, I make extra, then the next day mix some cheese in with them, spread them out in a pie plate and top with a little parmesean cheese and bake. Also the other day I made twice baked potatoes, they turned out well and they froze great, so the next day I made 20 baked potatoes and did them again to freeze. I made the baked potatoes in the microwave. When I could handle them, I took out most of the insides, leaving a little on the sides to give them some rigidity. Then I mashed what I had taken out, with milk and butter. Then I stirred in some cheese, some I put little pieces of brocolli. Then I took that mixture and spooned in into the baked skins. Put bake in the oven for a few minutes to let the cheese met. The ones that I froze, I put on a plate, put into the freezer for about a 1/2 hour, then put them in baggies and froze them solid. When I want them, I just take them out and pop into the microwave to defrost and then into the oven.

My son and I love fried potatoes. We slice them up skin and all throw em in a pan with a little butter, bacon bits and chopped or dehydrated onions, pepper and garlic and fry em till their brown on the outside. Want to turn them regularly so they don't burn on the bottom. My son is 15 and he fixes these all the time - he'll always ask if I want some and will make extra for me. He's also experimented with different spices like cyanne pepper, chili powder, and some lemon stuff we had (that wasn't too good).

that sounds sooooooooooo good. it reminds me of when i was a kid. for a bedtime snack my mom would make us these potato things. Very thinly sliced potatoes and fry them in a skillet with just a little oil and they tasted just like potato chips. add some salt and pepper. and we were ready to go! thanks

I don't know how new this is to you, but my sister makes great mashed potatoes and she puts cream cheese in them. They are very good and you can't tell what is making that great taste. I didn't have a clue until she told me.
