How do I make Chicken Animals?

My kids nagged until I got them some Bernard Matthews Dinosaurs. Not that I have anything against the company, I am a little concerned.
The pack states improved recipe, lower salt, no artificial colurs, flavours or preservatives. With 39% turkey, they are still 21.7g fat - and 327 calories per 100g. They seem quite a bright orangy yellow breadcrumb too. At 2 dinosaurs (approx 100g)each is that still a lot of fat? I think it may be.
I have made fishcakes before and have no problem mixing fish with a little potatoe and glueing breadcrumbs with egg.
How would I do this with chicken/turkey? Do I need to cook the meat first?
Any recipe ideas please?

just like to add though.
I have a hell of a lot against the company, I really do.
factory farming in general, but Bernard Matthews being one of the worst offenders, in my eyes.
there have been numerous documentaries showing the conditions the turkeys are kept in, and some members of staff abusing the birds, kicking them, throwing them and so on.
