Lowcarb Muffins

Lowcarb Muffins - These are low carb muffins that I made last night.

For those of you who are on a low carb diet. I baked low carb muffins last night. I wasn't too hungry but I had been hearing great things about these little things so I decided to give them a try. Before you look at the picture just know that I'm not the cook in the family but these were good. If you want to make them yourself the recipe is as follows: 2 8oz. Cream Cheese 2 Eggs 1/2 Splenda--I didn't use that much 1 tablespoon of vanilla extract Heat oven to 350 and bake for 20 minutes. The taste like cheese cake muffins.

Hmm. Sounds pretty good. I haven't heard of those before, but I have made pancakes from a cream cheese batter. My kids still ask for me to make those. :) I'll have to try and find the recepie. Thanks!

These sound wonderful! I have to watch my sugar and the no flour thing is just fabulous. I cannot wait to try these. They sound like you could serve them up for a 'small' dessert. also. Thanks so much!

Some people have put sugar free chocolate, pudding, whip cream, perserves and other interesting things on them. I actually got this recipe from my favorite site lowcarbfriends.com.

Thank you for the recipe, I am wondering though, on the Splenda how much is to be used? it says 1/2 but not the unit I am guessing cup, but want to make sure. Does splenda cause you stomach pains?

Hey great! Thanks for posting this recipe, my wife is a diabetic and we will definitely try this as we are both trying to cut down on our carb intake. Also, i didnt know that you could use Splenda for baking. Can Splenda also be used for cooking? Again thanks!
