Hot Turkey & Gravy Sandwiches

Hi Everyone. My grandmother used to make a large crock pot full of turkey and gravy for sandwiches at large family functions. It was always so good and everyone loved it. She's gone now and no one seems to know the recipe. I'm turkey illiterate--I've only ever made one and I made it upside down!! My son is having his first communion in May and I have a whole turkey in my freezer. So I thought I would make turkey and gravy for sandwiches. But for the life of me, I don't know how to do it---especially the gravy part. Any help out there?? In most other areas, I'm really a pretty decent cook. But turkey is a bit foreign to me. We usually go to other people's homes for holidays so I don't often have an occasion to serve something like that.
