I made a simple vegetable soup tonight for supper. Leftover beef roast, mixed veggies, and a can of diced tomatoes. Add some beef broth and crushed red pepper and you've got some good soup. I also made peanut butter and honey sandwiches to go along with it. Sounds kinda dorky but it was...oh so good.

Spaghetti with Bacon and Olive Oil
Bacon and Parmesan cheese are wonderful over pasta, and this simple recipe will have a delicious dinner on the table in no time. If you've got a fruity extra-virgin olive oil on hand, use it here to drizzle over the cooked spaghetti -- you'll taste the difference.
Servings: 4 to 5
Ingredients:
1 (16-ounce) package spaghetti
8-10 slices bacon
1/2 tablespoon minced garlic
2 tablespoons Parmesan cheese
2 tablespoons olive oil
Salt to taste
Directions:
Cook the spaghetti according to the package directions. Drain and set aside.
In a large skillet over medium heat, cook the bacon and drain on paper towels. Drain most of the fat out of the pan, but leave any remaining bacon bits. Crumble the bacon slices.
Add the garlic to the pan and cook for about 30 seconds. Pour the spaghetti in the pan and add the crumbled bacon, olive oil and Parmesan cheese.
Toss well to coat the spaghetti. Add salt to taste.

That sounds wonderful! I didn't cook tonight. I ended up toasting a bagel and adding some turkey to it. Then I had fat free potato chips and a Pepsi.
Maybe tomorrow I will bake some tilapia. I always back it on a foil covered pan. I spray the foil with cooking spray and then sprinkly both sides of the fish with lemon pepper. I then cover the fish with foil and bake until done. I will add baked potatoes topped with butter, sour cream and cheddar cheese.

i made a green bean with shitake mushroom in oyster sauce stir fry. I add some chopped of sausages and a cube of chicken stock to taste. For the side dish, i made an dried shrimp paste omellette. I add some dried shrimp paste and a table spoon of red chili pepper paste into the beaten egg. after that i add some sliced of shallots before frying them. This two dish really a good match for our dinner and my spouse love to eat them.I serve them with plain hot rice.

I really outdid myself tonight ..a gourmet meal ..ohhh how I slaved. I made a box of Alredo flavor Tuna Helper and some corn! lol I don't cook that ofen, I don't have time, so dinner for me is usually whatever is quick and easy. Although I did make some homemade sugar cookies tonight because I had no sweets or anything in my house LOL
