Thai Chicken Pasta

I had to cook a quick tea as my daughter had swimming training, plus I had my two step children. Knowing they love pasta, and I felt like something with a bit of a bite, I came up with this recipe. They loved it. It's quick & easy, & fairly cheap too.
INGREDIENTS
pasta
chicken pieces
leeks
peas
carrots
corn
minced basil
minced garlic
minced thai sauce
RECIPE
Lightly fry the leaks.
Cut up the chicken into bite size pieces, and fry it until brown.
Add the peas, corn & julienne carrots.
Whilst this is happening, starting boiling up some pasta.
Add the minced garlic, basil & thai sauce to the chicken mixture.
When all is cooked, mix it all together (with pasta). and serve.

Sounds good. But what is a leek? I hear people say they are good but when I hear leek I picture a leech. I know they aren't the same but is a leek a veggie? My husband likes this kind of food and i wanna know what I'll be cooking. LOL.

A leek is much like an on onion, only milder. You can use an onion instead. It is a long green/white vegeatable.

This sounds great. I think we're going to try this sometime in the next couple of days. I don't think we can get the minced Thai sauce here, but my husband tells me he can probably work around that. Yumm!

Rachel Ray has a great recipe for a Stir-fry Chicken Satay with orange Jasmine rice. It Rocks! Even my 2 year old loves it. Check out the food network web site and give it a try.
