Hi Ueban,Place your fish in 7up soda overnight covered lightly in the refridg.Next day drain all soda,Make a mixture od garlic powder,lemon ,salt,sage,pepper..Put enought lemon juice and melted butter to make a paste.
Rub this mixture into the fish inside and out.Cover it tightly and let it cook at 325 untill the fish falls from the bone..I can smell when it's done but you have a younger , less experienced nose so you'll have to check.The first check at about an hour then go from there.
You fish will be tasty and moist.Let me know how you like it.

Letting it marinade in the 7 up takes the strong fishy fish taste out that fish like Mack have ...It also give a nice sweet tang to the flesh...You could try have with and half without to see.My dad was an Adirondak fishing and hunting guide for many years so I learned to cook wildlife early on.Learned lots of different ways of cooking the same thing too

oh I am sure you won't believe me but as soon as I read...mackeral I thought it was another of your games and it meant macheroni!!!! now I can read in my vocabulary that it is a kind of fish...ok...in Italy this fish is very similar to tuna fish..so I can tell you many ways of cooking it...is your mackeral fresh? is it cut into...or...fillets?? if it is in fillets you can add a little sauce made with lemon, vinegar, garlic, and parsley...put the sauce on the fresh fillet and let it stay this way for half an hour...then you can cook it grilled..it would be wonderful...or maybe you want it with a little of tomato...well you can take a little pan...add oil and a garlic and let it go a little...then add fresh tomatoes (it is best to use pomodorini, that is a variety of little and red tomatoes) and mix them a little...then add the fillet, black olives and ..oh I don't know it in English...capperi is in Italian...ok let me see..caper and cook slowly...hope that it is clear...let me know
