probably the simplest is lentils! the way i make them it doesn't look as tastie as it is, but i promise it is delicious! all it is is:
red lentils (adjust the amount to the amount you want to produce... petty simple)
curry powder
any other spice you want to add (lemon pepper is pretty good and a pinch of cumin)
potatos/sweet potatos cut into cube like shapes... or really any shape haha or you could put broccoli or really anything else!
garlic
boil some water ( i forget the ratio of red lentils to water i normally just do it as i go adding water when i see fit) add the lentils add the potatos/broccoli right away or wait till they've cooked a bit. i like to add them early
when it starts to get thicker add the spices and garlic
cook till desired thickness is aquired and enjoy!
it's really simple because well... you can relaly do anything with it that you want!
