does anyone have a good low fat reciepe for a chicken dish?

First off: skin it. The skin has most of the fat. After that there are some really great places to go with it.
How about: Orange Poached Chicken?
Take a frying pan, put a little bit of oil on the bottom, heat it really hot, toss in the chicken and sear as much of it as you can. (A couple of seconds each side!) Reduce the heat, add some garlic, oregano, corriander seeds, and cumin. Stir to get the chicken all covered. Pour in some Orange juice. At least enough to cover the bottom of the pan but not so much as to cover the chicken. Put a lid on it. let it steam for about 10 - 15 minutes. Toss in a bunch of chopped vegetables (peppers, onions, broccoli, etc) Let those steam with the chicken for about 5 minutes. Pour the whole melange onto rice.

chicken drum sticks:
I some times make this in oven , no oil nessasary
I marinate chicken with salt ,pepper,dry herbs(what ever you like),curd,fresh lemon juice.
it is upto you, howmuch time you want to marinate not less than 1 hr.Even you can marinate over night keep in refrigerator.
take the chicken out,let the chicken come to room temperature.
preheat oven 350 degree,place the chicken in non stick rack, cook for 30min or more.check every 10 minutes,turn the side if you desired.
serve hot with cucumber,radish slices.

All I do is squeeze some lime, pepper and salt and marinate the chicken for around 30 minutes. After that I cook it in the pressure cooker with some water or till it is cooked.
You can then use it to make a sandwich bu adding onion rings a bit of seasoning.
