I just love cheese cake. I don't eat it very often because it is just so rich, but every once in a while I just love a big piece.

Yummy.. Me too.. All chocolate cakes are my favorites. I am so in love with it! The best chocolate mud cake i have tasted was at Thank God It's Friday (TGiF). They make excellent and delicious one. The best part of it, if the customers are there for celebration such as birthdays and anniversaries, the chocolate mud cake is completely on the house! Isn't that terrific? Though the cake is not that big, the thought of it being free and delicious are good enough for me. Besides TGIF, I also like going to Starbucks and Coffee Bean because they too make excellent chocolate cakes.

My favourite cake of all time is:
RICH MARBLED CHOCOLATE CAKE (Makes a 8 inches round cake)
Ingredients
125g dark chocolate, chopped into small pieces
125g unsalted butter
125g sugar
2 eggs, beaten
155g all purpose flour
1 1/3 teaspoons baking powder
1/3 cup (80c.c.) milk
1 1/3 tablespoon brandy
½ tablespoons vanilla extract
For Garnish
100g white chocolate, chopped
100g dark chocolate, chopped
5 tablespoons whipping cream
Steps
1. Brush melted butter on the inside of a 8-inch round baking tin. Cover the inside of the side and the bottom with baking paper. Melt 125g dark chocolate with a double boiler, leave for later use.
2. Mix butter, sugar and beaten egg, a little at a time, in a bowl, mix well until smooth. Add in vanilla extract and mix well.
3. Sift all purpose flour into the mixture and add milk into it. Mix well until smooth. Add brandy and a little more vanilla extract, mix well. Divide the mixture into two, add the melted dark chocolate into 1 of them, mix well.
3. Pour the 2 mixtures, a little at a time, alternatively into the baking tin, stir the mixture with a long needle to form the marble pattern.
4. Preheat the oven at 180oC. Bake the cake at 180oC for 40 minutes. When the cake is done, remove from heat and let cool for 15 minutes. Turn it upside down to remove the cake from the baking tin.
5. To garnish, melt white chocolate with 2½ tablespoons whipping cream over a double boiler, and melt dark chocolate with the reminding 2½ tablespoons whipping cream over a double boiler. Scatter white chocolate mixture on top of the cake in large dots and scatter large dots of dark chocolate mixture next to the white chocolate dots. Stir the mixture with needle to form marble pattern. Ready to serve.
It is recommended to consume the cake within the day of baking.
