I've heard from some people that they refuse to eat leftovers. Are you one of the people that doesn't eat leftovers, or does it even matter to you?

I don't know if I would like that. Some nights you must want something else.

We generally don't eat leftovers. It's not that we refuse, it's just that we stick the leftovers in the fridge and forget about them. Or there's not enough left for another full meal, so it gets put in the fridge and forgotten about, because nobody seems to want the stuff, or it gets shoved to the back and forgotten.
It's like George Carlin says. Leftovers make you feel good twice. When you put them in the fridge, you feel good because you're saving money. The second time you feel good is when you clean out the fridge and throw them away after they've become unrecognizable, thinking "I'm saving my life".

I've noticed that happens in my house sometimes too. Well throw something in the fridge and then not take it out again until its time to throw it out.

Leftovers are great! I always eat them and even try to cook a little extra so I have them. They are so versatile and can save you the work of having to cook a new meal every night.
I really like challenging myself to see how I can reuse leftovers and turn them into something new. Leftover roast chicken becomes soup or stew. Left over pasta can become a spagetti pie (put in a cassarole dish, use egg and extra cheese to bind it together...bake till set and then cut out squares, serve with veggies or salad), and I LOVE making calzones with various leftover veggies and meat. Bonus of that is my boyfriend loves eating calzones so whenever I offer to make one he's super happy.

This is an excellent comment and very true, in today's fast paced world having something to heat up can be a life saver. I like how you said you purposely make extra to have leftovers, this is an excellent idea.

Well leftovers are still food. lots of people doesn't have the luxury to eat 3 times a day. we shouldn't waste food. as long as it's still good leftovers are ok.

I love left overs it makes meals that much easier for example if I have roast chicken one night I will usually have chicken fettucine alfredo or a chichen casserole a couple of nites later. I like to cook so that I know Im gonna have left overs. I even prefer some thing as leftovers I love leftover pizza and spagetti. I dont think there are many things I dont like left over besides anything fast food.

A lot of people seem to be saying in some way that leftovers make life a lot simpler, which I am starting to realize and agree with.

I don't know about it tasting better, but I guess some things could be better. Sometimes I do like some pizza that has been put in the fridge.
