Do Any one know Any indiginous Frmented Foods of Local sabah

Hi Dear any one among you have acquainted with any fermented food of Sabah, or do any one have any idea how to prepare the fermented foods locally?????Need you feedback to improve the knowledge.

Hi App, I know some of the fermented product of Sabah as we do have them almost every where at the local fresh vegetable weekly market of called Tamu in Sabah. I know one of those fermented food which my mother always make at home. This one is the product of Idahan tribe for their fermented food. To make a fermented fish like what my mother have always make, you will need a fresh water fish (preferable the silver catfish), boiled sweet potato and salt. All you have to do is just clean the fish and cut them into pieces after that mashed the boiled sweet potato. Mix all together in one bowl before keeping them in a air tight container. After a week you can check the fish and it is ready to eat. One week period is enough for the fish to get fermented by the sweet potato which you boiled just now. This fish can be cooked as a stir fry with a shallot and garlic and the chili pepper. The more spicy the fish the more tasty you will taste. You can serve them with hot plain rice. Hope this can help you.
