What kind of kitchen knives do you use in your kitchen?

I love being in the kitchen, although I like to bake more then actual cook. My hubby and I used to own a sports bar with a full restaurant. I've got so many sets of knives its reaching the ridiculous stage. I've had people give me set after set of knives, and there are many different brands. Some of them I had heard of while others, were new brands to me. My favorite set has to be my Dexter-Russell set. The knives are heavy stainless steel, with good, solid handles. I also own quite a few Chef's Secret, and I would like to invest in a good set of Chicago Cutlery. What is your favorite knife in your kitchen? Hugs.

I have a whole miss mash of knives, some good and some not. I just took out my knife board and was trying to find knives that fit. I do not have a cleaver or one of those good Chef's knives, the kind that Rachel Ray uses, and some of my knives are unsharpable. A lot of them I inherited from my grandmother and some were presents or gotten from garage sales or used to be my mom's. I do not have a favorite knife except maybe this large vegetable knife.

I don't have a favourite knife, but can identify with how people keep giving you knives. My parents gave me a set of japanese knives, individually packaged, supposedly 'never needs sharpening' but when i opened one, it was not as sharp as my La belle cuisine old knife. which is my current favourite. Use it for cutting vegetables.
And I once bought my friend a Global knife, cos he indicated that he'd like that as a present. Which was really really expensive. For a knife at least, in my opinion. But he's an up and coming gourmet chef so what do i know.
