Hi Ashley! First of all, an early wish for a happy anniversary to you.
Do you like cheese cake? I found a recipe of a really fancy cheese online to share with you. I think this is the most suitable cheese to have on your sweet (honey) and romantic (rose) anniversary!
Rose Honey Cheese Cake
Ingredients
160g rich tea biscuits
50g butter
80g melted chocolate
60g organic rose tea
200g milk
80g honey
100g cream cheese
60g sugar
100g cream
5g gelatine powder
25ml water
Steps
1. crush rich tea biscuits into coarse grain. Mix butter with biscuit flakes.
2. add melted chocolate into the biscuit flakes and mix well. Press firmly to the base of the mould to form the crust.
3. pour milk into a pot and place over the heat. Grind the dried rose bud of the rose tea with a food processor. Add ground rose to milk, stir and bring to boil. Keep stirring until thickened. then remove from heat.
4. add sugar to cream cheese. Beat to smooth
5. beat cream until foamy. Add into the cream cheese mixture. Mix until smooth.
6. Dissolve gelatine powder in the water. Spoon some cream cheese mixture into the dissolved gelatine mixture and mix well.
7. pour the gelatine-cream cheese mixture back into the cream cheese mixture, mix well.
8. pour half of the cream cheese mixture into the rose-milk*, mix well, and pour into the mould, on top of the crust.
9. add honey to the remaining cream cheese mixture, mix well, then pour on top of the rose-cream. Refrigerate for at least 30 minutes.
* You may strain the rose tea from the milk before mixing the cream cheese mixture.

I hope you enjoy this cake. It's heavenly.
Chocolate Sunshine Cake
Preheat oven to 325 degrees F, rack in the middle position
4 one-ounce squares unsweetened baking chocolate
1 cup frozen orange juice concentrate, melted and at room temperature
1/2 cup soft butter (1 stick, 1/4 pound)
2 1/2 cups white sugar (granulated)
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon orange extract (or 1/2 teaspoon vanilla)
2 eggs
2 cups flour (no need to sift)
1/2 cup milk
1 cup chopped pecans (or walnuts)
Grease (or oil, or spray with non-stick cooking spray) the inside of a Bundt pan. Dust with flour, or cocoa, knocking out the excess.
Put the chocolate and orange juice concentrate in a microwave-safe bowl and heat it for one minute on high. Stir it and then heat it again on high for another minute. Stir until the chocolate has melted. Set the bowl aside to cool. (You can also do this on top of a double boiler.)
The following steps are a lot easier if you use an electric mixer: Combine the butter and sugar, and mix until fluffy. Mix in the baking powder, salt, and orange extract. Add the eggs, one at a time, mixing after each addition.
Add half of the flour to the bowl. Mix thoroughly. Mix in the milk, and then add the rest of the flour.
When the chocolate mixture is cool enough to touch, add it to your bowl. Mix thoroughly. Scrape down the bowl with a rubber spatula and then add the nuts. Give a final mix.
Let the batter rest for several minutes, and then pour it carefully into the prepared Bundt pan.
Bake at 325 degrees F, for 60 to 70 minutes, or until a cake tester inserted in the center of the ring comes out clean.
Remove to a wire rack and let cool for 25 minutes. Loosen the cake around the outside and inside edges with a sharp knife, and tip it out onto the wire rack.
Let the cake cool completely and then glaze. (Or, if you don't feel like making a glaze, just dust the cool cake with confectioner's sugar.)
Chocolate Glaze:
1 cup chocolate chips
1/3 cup cream
1 teaspoon vanilla
Combine in a microwave-safe bowl. (I use a one-quart glass measuring cup.) Microwave on HIGH for one minute. Stir until chocolate chips are melted. If the glaze is too thick, add a little more cream. If the glaze is too thin, add a few more chips.
Drizzle the hot glaze over the crest of the cake and let drip down the sides.
