I love rice. I would like to know some different ways of cooking it. As here there are a lot of people from different countries I thought it would be interesting to know different ways of cooking it, with other ingredients. Sweet,pudding, as a side dish, soups, fried, etc..

here are some interesting recipes of rice dishes..
Onion Rice Pilaf
INGREDIENTS
1/2 small onion, chopped
1 tablespoon butter
1 cup uncooked calrose rice, rinsed
1 1/2 cups chicken broth
DIRECTIONS
Heat the butter in a skillet over medium heat. Stir in the onion, and cook until soft and translucent.
In a small saucepan, combine the rice, onions, and broth. Bring to a boil over high heat. Reduce heat to low, cover, and simmer 30 minutes. Remove from heat, let cool for several minutes, then fluff with a fork.
Rice Pudding
INGREDIENTS
1 cup cooked white rice
1 quart milk
1/2 cup white sugar
1/4 teaspoon salt
2 eggs, beaten
1/2 teaspoon vanilla extract
1 teaspoon butter
1 pinch ground nutmeg
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart baking dish.
In a 2 quart saucepan over medium heat, scald the milk and remove from heat. Add the rice, sugar and salt. Mix well and slowly add the eggs and vanilla. Pour mixture into a 2 quart baking dish. Sprinkle nutmeg on top. Bake for 40 minutes. Stir pudding after 20 minutes.
Rice Casserole
INGREDIENTS
3 cups cooked rice
1 1/4 cups shredded Monterey Jack cheese, divided
1 cup canned or frozen corn
1/2 cup milk
1/3 cup sour cream
1/2 cup chopped green onions
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together the rice, 1 cup of the cheese, corn, milk, sour cream and green onions. Transfer to a 1 quart casserole dish, and sprinkle the remaining cheese over the top.
Bake for 25 to 30 minutes in the preheated oven, or until cheese is melted and the dish is heated through.

Hi there. Heres a recipe for a delicious Rice Salad. To be eaten warm or cold, as a side dish to meats.
You will need:
3 bags of Cooked and well drained Rice, (Prefer Uncle Bens)and depending on how many people you are feeding.
1/2 cup of Sultanas add more if u like
1/2 cup of Cashews Nuts add more if u like
1/4 cup of Spring Onion (Chopped in thin Rings)
1 teaspoon of Curry or (to your taste)
1/4 to 1/2 cup of Mayo
Salt and pepper if u like.
Ok in a large bowl add the cooked rice, sultanas, cashew nuts and the spring onion. Give it a good mixing.
In a separate cup or jug, add mayo and curry, whisk it up until mixed well, lastly add it to the bowl of rice and mix through. Thats it simple and ready to eat, or
keep it in the fridge until ready to eat.

the common way we prepare our white rice is just to steam it or cook with water in the rice cooker then another menus for dishes to go with our rice like chicken pork adobo , garlic & soy steam fish , beef steak , pork or chicken barbeque , crispy calamare , spicy mix seafoods and much more to go specially roasted pork knownly famous as LECHON.
we sometimes make FRIED RICE too by having our leftover rice with butter , garlic , chopped ham or chinese sausage , green peas , scrambled eggs , shallots , chopped carrots and seasoned with soy sauce and salt. this is great for breakfast too with fried dried fish ; pork tocino ; longganisa ; crispy fried milkfish and salted egg with tomato slices.

I like rice salads. This summer my Dad made a Capresse salad using italian aborrio rice and it was great! A perfect summer time food!
Capresse salad is a salad using oilve oil, tomotes, basil and (hopefully, you can find it) fresh mozzrella cheese. To make the rice version you cook the aborrio rice and then spread out on a baking sheet to cool.
When the rice is cool, put it in a big bowl and stir in the tomatoes, basil, olive oil, and cheese. I don't think you have to measure here, you can really just do it to taste, if you like more tomatoes, put more tomatoes. This is a really flexible and versatile recipe. Season to taste with salt, pepper, oregano and a little garlic, if you like.
It's really good!

I love rice dishes too. I have found some great recipies at Hillbilly housewife.com. For things like red beans and rice,dirty rice,yellow rice.and a svory onion rice that was really good.

Mushroom Rice

Ingredients:
1 cup uncooked long-grain rice
1 can (10.5 ounce size) condensed French onion soup
1 can (10.5 ounce size) beef broth
1 can (4 ounce size) sliced mushrooms, drained
1/4 cup butter
Directions:
Preheat oven to 350 degrees F (175 degrees C).
Combine rice, onion soup, beef broth, mushrooms and butter in an 8x8 inch casserole dish.
Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes.
Dirty Rice Recipes
Ingredients:
2 tablespoons bacon fat
3/4 cup chopped shallots
1 finely chopped rib celery
1 pinch fresh chopped parsley
1 pound finely chopped or ground chicken giblets
1 tablespoon tomato paste
1/2 teaspoon cayenne pepper or Tabasco sauce
2 cups rice
4 cups water
salt to taste
Directions:
Saute the shallots, celery, and chicken giblets in the bacon fat until golden brown. Add the water, tomato paste, rice, salt and pepper. Bring to a rolling boil. Turn down heat...cover, and simmer for 25 to 30 min, stirring occasionally. Uncover and let stand for 5 to 10 min. Adjust seasoning to taste! Fluff with fork and serve. Goes great with fried chicken, pork chops, etc.

Hi, I only know rice as a main dish. Where I come from, people eat rice with side dishes that can be anything from fish, chicken, meats, vegetables.
But there is also what we called fried rice, where you fry the rice, mix it with soya sauce, a bit of chili, mix with cuts of meats or chicken, or sausages, and then put a fried egg on top of it. Yummy... remind me of my mum's cook. It's called "nasi goreng" in our place.
There is also the African style to prepare the rice, but still for main dish. Instead of cook it with water, the Africans like to cook it with oil and put a bit of salt in it, so the rice becomes kinda greasy, but nevertheless yummy... Of course you have to enjoy it with side dishes... now that's another story..:-)
