When I lived in the dorm I didn't have/couldn't have a microwave so instead I got myself an electric rice cooker and an electric hot pot. With these two tiems I could make tons of food!
The electric rice cooker can be used for cooking rice, but also for steaming vegatables. With this I was able to make many heathy dinners. One night my friend and I even made veggie sushi right in my dorm room!
A hot pot essentially just boils water very quickly. But with this you can made noodles and pasta. I could make Ramen and macaroni and cheese (I would add tuna to the mac and cheese).

As a matter of fact, there's a website that you might find useful. It has quite a few tips for people interested in making quick meals in their handy, dandy microwave oven. :)
Here ya go, marcram: http://www.recipegoldmine.com/microwave/micro.html
There's also a book out there that has recipes, "Microwave Cooking for One." You can order it from: http://www.microwavecookingforone.com/
Let me know how that works out for you! :)
