Does anyone have a recipe using millet they would like to share?

I need to get to the grocery so I am running low on some things. I have millet in my cupboard so I was wondering if anyone had a recipe they would like to share. I will probably just have a salad or perhaps steamed carrots with this....thanks for your help!

Millet Pudding Ingredients: 4 cups milk 1/3 cup whole millet (more or less to taste) 1/3 cup maple syrup (more or less to taste) 1 tsp vanilla Mix all of the above ingredients EXCEPT vanilla. Pour mixture into a baking dish and bake in a 250 degree oven uncovered until the pudding thickens and millet is tender (about 3 hours). Stir periodically. A skin will form on the pudding. When it appears moderately thick, remove from oven and stir in vanilla. Serve warm. Serves 4-6

Wow. Have you ever tried this? It reminds me a bit of tapioca pudding. The consistency at least. Very interesting. Thank you.

Millet comes in many forms. But what you can do is cook it like rice and flavor it how ever you want it could be seasoned well or sweet to the taste. Hope this helps. Let me know what you do with it. Chef Michael

So is millet interchangeable with rice in dishes? I haven't used millet much (obviously :)). I do use brown basmati rice a lot. Thank you for sharing your knowledge.
