Have you noticed that pasta usually tastes better the day after you make it? I always stick leftovers in the fridge and then eat more of it the next day. It always tastes better, more flavorful, the second day and I don't know...

Loretta That sounds so good. I think the same. My mom used to fry up leftover spaghetti and it was a treat. Some think I'm weird, but sometimes I like to make plane elbow mac and put in the refrigerator to eat cold with a bit of salt.

Anna It's because the sauce has more time to penetrate into the pasta making it more tasty. We always saute the pasta with the sauce in a pan before serving. We let it rest for a couple of minutes, saute the pasta and serve hot.
