I love ice cream sandwiches especially the ones that are made with chocolate ice cream but they are harder to find. I also prefer the premade ones. I like the taste better and sometimes i am too lazy to make my own.lol. My mom used to make them with chocolate chip cookies. They were ok but I'd rather have store bought. Shhhhh, don't tell my mom I said that.lol.

I love ice cream sandwiches. I've never tried to make one, but maybe I should. They are absolutely delicious. They have boxes of them I can buy at the dairy queen, and take them home to eat when I want. I love those things!! I'm hooked on them.

Ice Cream Sandwich Recipe
This is a chocolate shortbread recipe. You may use any tender cookie recipe. You merely need a cookie that crumbles when bit rather than squishing the ice cream out. Both sugar cookies and shortbread cookies make excellent ice cream sandwiches.
Ingredients:
3 one-ounce squares of semi-sweet baking chocolate
1 tablespoon butter
1 cup butter
1 cup powdered sugar
1 dash salt
4 large egg yolks
1 teaspoon vanilla extract
3 cups all-purpose flour
Ice cream
Directions:
1. Melt the chocolate and one tablespoon butter in the microwave. Set aside.
2. Cream the reamining butter and powdered sugar together. Add the salt.
3. Add the four egg yolks, beating after each. Add the vanilla.
4. Add the flour in three parts, beating after each addition.
5. Scrape the dough onto a large sheet of waxed paper. Pat the dough into a square or a round log. Wrap it in waxed paper and smooth the edges into a uniform log. Refrigerate the log for at least an hour.
6. Preheat the oven to 350°F degrees. Cut the dough into 3/16 inch thick slices. Place them on an ungreased baking sheet. Bake for 8 to 10 minutes or until just set. Cool on a wire rack. Once cooled, place the cookies in the freezer to chill.
7. Once the cookies have chilled, fill them with slightly softened ice cream. The top sides of the cookies should be facing out. Place the sandwiches in the freezer until they are completely firm.
Baker's Notes:
1. The dough can be stored in the refrigerator for up to 2 weeks or frozen for 2 months.
2. For a richer chocolate cookie, use four ounces unsweetened chocolate instead of the semi-sweet. Add 2 tablespoons powdered sugar.
Why It Works:
This dough creates thin, dense, rich shortbread cookies that work well with ice cream. The cornstarch in the powdered sugar holds the cookie together to make it less crumbly. If granulated sugar was used, the grains would cut through the butter leaving tiny air pockets that would tend to leaven the cookie and make it less sturdy.

Oh my goodness! Do I ever like ice cream sandwiches! Yum. I have never attempted to make my own, but I used to get the premade ones when the ice cream truck came by our old neighborhood. Of course, getting them at Carvel or in the frozen food section of a supermarket is always good!

lol. I had it very often when I was a child. There is this old man selling it in a cart and we will frequent him almost every evening. Nowadays, I just get a tub of ice-cream if I just feel like eating ice-cream. At times, I will make ice-cream sandwich using bread or biscuits. It's just so convenient with a tub in the freezer and a handy loaf of bread or tin of soda biscuits. My home always has an available loaf of bread for breakfast daily.

Yes I love eating ice cream sandwiches.Although it is not common here in our country but still we are making it our own in our house.The whole family loves it.

I love ice cream sandwitches but I only buy them. I never thought about making them myself and I should look into that. You think it's cheaper to buy them? I'm sure there is a way to make them for cheaper and I am going to try to find some recipes on the Internet. I hope that someone will answer with a cheap recipe. We will see. Thanks!

I love ice cream sandwiches. Schwans makes a Mississippi mud one that is awesome. I like the regular ones too. We sometimes make our own out of cookies that I have baked either chocolate chip,peanut butter,or sugar cookies. They kids like making them.
