My cupboards are never actually bare; there are always at least a few canned goods. So, now I'm trying to get creative with what I've got, and I'd like to hear your ideas for what can be made from canned tomato soup a little fresh tomato and other odds and ends? Do you have any old favorite recipes or cooking creations that you invented when pantry cooking? Please share.

You could make a soup. Make the can according to directions then add the fresh tomato. I dont know what your odds and ends are but left over rice or veggies could be added. Or pasta if have any could cooked and you could make your can of soup into pasta sauce by not adding all the water. Then top it with the fresh tomato.

That sounds like a plan. I've made it with elbow pasta and a little crumbled leftover meatloaf before, but veggies sound good.

Tomato soup makes a good "base" for spagetti sauce or pizza sauce. Just add a little basil, garlic and oregano.
It is also good for barbeque sauce or marinade; add a little vinegar, soy, and then, either brown sugar or molasses.

I've never tried making barbecue sauce with tomato soup. I'll have to give that a try. Good idea.

When I have tomato soup in the cupboard, the kids want just tomato soup. Pretty boring unless you spice it up a bit with odds and ends.
Instead of water, I use milk or cream, then I will take a look in the fridge and see what is in there. Maybe add some cheese, or sausage, if I have it. Maybe add some pasta to have a pasta soup.
I like to add cumin to tomato soup and serve it up with some tortillas.
Another one my kids love is when I mix a can of tomato soup with a can of cream of chicken soup. Combined, they are a rich and yummy soup, through a sandwich or salad on the side and they go crazy

It's hard for me to tell you anything about canned tomato soup as I'm not used buying all this stuff. I can share a good tomato soup recipe with you.
4 cups chopped fresh tomatoes
1 slice onion
4 whole cloves
2 cups chicken broth
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
2 teaspoons white sugar, or to taste
In a stockpot, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill. In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.
I think this can work for you and would taste very good.

Thanks, Samrat. This sounds like a perfect idea for all the fresh garden tomatoes I'll soon have. :o)

I agree. I used canned milk for a lot of different dishes and recipes. Evaporated milk does give food a richer flavor.

Tomato soup is always best made with milk and I like Parmesan on most anything.

Not a main dish but still uses pantry staples and yummy!
Tomato Soup Cake
1 (10.75 ounce) can
condensed tomato soup
1 teaspoon baking soda
1 cup white sugar
1 egg
1/3 cup butter 1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 1/2 cups self-rising flour
1 cup raisins
1. Combine the tomato soup and the soda in a bowl, and let it stand.
2. Cream sugar, egg, butter, salt, cinnamon, and cloves. Mix in tomato soup and soda mixture, and then flour. Stir in the raisins, and pour the batter in a greased baking dish.
3. Bake at 325 degrees F (165 degrees C) for 1 hour, or until done. Cool the cake, and top with cream cheese icing.

I've used tomato soup and made it into vegetable soup. You can add some cans of vegetables in it or even frozen vegetables. Macaroni/or any kind of pasta can be added. I've put all kinds of things in to make my own special blend of vegetable soup.

That sounds good too. I also like to mix a can of beef barley soup with a can of tomato soup. Mmmmm.
