I love to cook, well i guess thats because I love to eat:oI'm having a family get together and I wanted to make some outstanding dishes. I figured who ever wanted to share their favorite recipes could post them here. heres one of my favorites:-Mixed berry tiramisu- This recipe serves about 10 people. 1 12-ounce pack of unsweetened frozed mixed berries 12 tablespoons sugar 1 10 ounce pack frozed rasberries in syrup, thawed 1/4 cup rasberry liqueur 3 4.40 ounce pack champagne biscuits (lady fingers) 3 8 ounce containers mascarpone cheese* 2 teaspoons wanilla extract 1 1-pint strawberries (hulled) 2 1/2 pint rasberries 1 1/2 pint blueberries*Italian cream cheese availacle at italian markets and specialty foods stores. If unavailable, blend 1 1/2 pounds cream cheese with 1/2 cup whipping cream and 6 tablespoons sour cream. use 3 cups for recipe. Cook frozen mixed berries and 6 tablespoons sugar in heavy medium saucepan over medium heat until mixture resembles jam and is reduced to 1 cup, stirring frequently, about 15 minutes. strain syrup from thawed rasberries through sieve set over bowl. pressing gently on solids. discard solids. Add rasberry liqueur to rasberry syrup in bowl. ushing sharp knife, trim 1 biscuit to 3-inch (about) length. Quickly dip buiscuit into syrup, turning to coat lightly. place rounder end up and sugared side against side of 9-inch-diameter spring form pan with 2 3/4 inch high sides. repear with as many buscuits as necessary to cover sides and bottom of pan. In bown wisk mascarpone with 6 tablespoons sugar and vanilla to blend. Set aside. Thinly slice enough strawberries to messure 1/2 cup. gentley spread half of jam mixture over biscuits in bottom of pan. spoon half of mascarpone mixture over; smooth top. cover; chill at leat 4 hours overnight. Release pan sides. Transfer cake to platter. Arrange reaming fresh berries decoratively on top of cake and serve. Bon Appetit

this is a desert! LECHE FLAN 8 egg yolks 2 cups milk 1 cup sugar Caramilezied Sugar: 1 cup sugar 1/4 cup water Preparation: Mix ingredients into a saucepan, cook and stir until the sugar turns brown.

Veggie Wrap-Ups - To assemble wraps, spread each tortilla with 3 tablespoons hummus. Sprinkle 1 tablespoon olives over hummus. Place 1 lettuce leaf on bottom half of tortilla. Top with 2 slices cheese. Place 1 tablespoon roasted red pepper strips and 1/4 cup cucumber strips onto cheese. Roll up.
When ever we have a large get together I like to start making some of the food the day before. That way I am able to spend some time with my guests instead of bing in the kitchen or out at the grill cooking. This colorful appetizer requires just five ingredients and can be assembled the night before serving. Beef & Cheese Pinwheels 12-ounces thinly sliced deli roast beef 1 (4-ounce) package herb flavored cream cheese 4 large flour tortillas (about 10-inches) 2 cups spinach leaves (about 20 leaves) 1 (7-ounce) jar roasted red peppers, rinsed and drained Spread cheese evenly over one side of each tortilla. Place deli roast beef over cheese leaving 1/2-inch border around edges. Place spinach leaves over beef. Arrange peppers down center, over spinach. Roll up tightly and wrap in plastic wrap. Refrigerate at least 30 minutes to overnight before serving. To serve, cut each roll crosswise into 8 slices. Arrange cut side up on serving platter. Cheddar Roasted Red Bell Pepper Pinwheels 4 strips of bacon 1/4 cup chopped onion 1 tablespoon chopped garlic 1 red bell pepper, roasted, seeded, skinned and chopped 1 package cream cheese 1/2 pound Cheddar cheese, grated 2 teaspoons dried oregano 1/2 teaspoon salt 4 (12-inch) flour tortillas Jalapeño peppers (optional) Cook bacon until crisp, about 5 minutes, and crumble. Add onion and garlic to bacon; sauté one minute. Drain and reserve bacon and onion mixture. Add red bell pepper, cream cheese, Cheddar cheese, oregano and salt to bacon and onion mixture; put in a food processor. Pulse to blend. Spread blended cheese and bacon mixture over one side of each tortilla and roll up. Cut each rolled tortilla into 1/2-inch slices. Serve with a side of sliced jalapeño peppers. These low-fat appetizers are packed with flavor. Veggie Wrap-Ups 4 (8-inch) reduced fat whole wheat tortillas 1 (7-ounce) container roasted red pepper hummus 1/4 cup chopped kalamata olives 4 lettuce leaves 8 (3/4-ounce) slices Alpine Lace® Deli Reduced Sodium Muenster Cheese 1/4 cup roasted red pepper strips 1 small (1 cup) cucumber, cut into 2x1/8-inch strips To assemble wraps, spread each tortilla with 3 tablespoons hummus. Sprinkle 1 tablespoon olives over hummus. Place 1 lettuce leaf on bottom half of tortilla. Top with 2 slices cheese. Place 1 tablespoon roasted red pepper strips and 1/4 cup cucumber strips onto cheese. Roll up. Wrap each in plastic food wrap. Refrigerate at least 1 hour. Cut each wrap into 8 pieces. Secure each piece with toothpick, if desired

Wow that looks and sounds delicious. I agree with you 100% the idea is to spend time with your maily not your oven. This is a great recipe, I will definatley try this one out. Thanks so much for sharing!
