I Went Gluten Free Last Week

Last week I got an email from my cousin, telling me he was diagnosed with celiac disease. He described his symptoms, and since I had a lot of them too, I decided to try an experiment with a gluten-free diet. So, in four days, most of my symptoms disappeared. I no longer have to rush to a restroom right after I eat, and I don't have to take pain releivers every night when I go to bed so my legs won't hurt. It is like a miracle.
If there is anyone else who is gluten intolerant out there, let me know what products you buy that are gluten free.

When I went gluten free, I saw it as a challenge. I love to cook, so I went to find what to substitute and what products there are available.
I enjoy the Tinkyada pasta, which cooks just like regular pasta (from what I remember, I think I like it better!)
also Bob's Red Mill has alot of nice gluten free flour mixes and plain flours, which are nice if you do any baking from scratch.
Potato starch can be used in place of wheat flour in sauces.
I just found the best thing... Thai Kitchen now makes gluten-free instant rice noodle soup (like ramen) that is simply wonderful!
Thats all I can think of at the moment, but look around, theres plenty! ^_^

I have been so ill but, never been diagnosed with this I thought it only happened when you were a kid. I get very bad pains in my lower right hand side and have bad ibs. It has been suggested I might have this but, I am 30 and only thought it happened when you were a kid.
