Breakfast in Bed For Mother's Day!!

With only two more sleeps until your much anticipated sleep-in, we thought all you mums may need a hand in making sure you receive the yummiest breakfast in bed on Sunday.
Ricotta pancakes with a drizzle of maple syrup, served with a pot of tea or plunger of coffee, the Sunday papers and lots of cuddles, is the perfect way to start your Mother's Day. Why not print out this recipe and stick it on the fridge? We have our fingers crossed that somebody other than you notices it!
Ricotta Pancakes
Ingredients
4 large eggs, separated
2 cups ricotta cheese
2/3 cup sour cream
1 1/3 cups plain flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups milk
Melted butter
Maple syrup
Method
Whisk yolks, ricotta and sour cream in large bowl to blend. Whisk flour, baking powder, salt and baking soda in another large bowl to blend. Add flour mixture to yolk mixture and stir until combined. Stir in milk. Using electric mixer, beat whites in another large bowl on medium speed until soft peaks form. Fold beaten whites into batter. Heat heavy-based fry pan over medium heat. Brush with butter. Working in batches, spoon 2 tablespoons batter into the frypan for each pancake. Cook until golden brown, about 3 minutes per side. Serve with maple syrup and extra cuddles.

Well kathy i printed this out and put it on the fridge but now i am scaredlol. If the kids see this they will try it and i dont believe their cooking skills have improved much this mothers day as compared to last. Oh well it is the thought that counts right. And my gag reflexs are pretty good too i have choked down many meals in bed from my kids and they never knew the difference. They are sweetys that way and aim to please. I also know it comes from the heart.

thanx friend for sharing the recipe, mother's day is over but this recipe is worth getting a print andsticking it on the fridge or somewhere near or iside the kitchen. it is so very easy. i will give it a try in the evening sometime or on sunday. i am very far from my mother so i cannot cook and serve her but talking about mothers , i remembered her and missing her alot, i wish i could meet her. its more than a year that i went to my parent's place . after marriage it has become difficult for me to meet them and enjoy mytim with them as it was before.

Hi Kathy, this looks wonderful. My fur babies would make a mess in the kitchen. So, I shall have to make this myself! I haven't had pancakes for a while now and this looks great. It'll be nice for a change. Thanks

Wow, these pancakes look really good. My hubby and I have them a few times a week, but not your recipe. I am going to give this one a try, as we love ricotta too. Can't wait to make them. I gave you a + rating again. Keep up the great postings.

Your recipe for Ricotta Pancakes sounds delicious, so I have printed it off and put it on the fridge - we'll see what happens! I haven't had breakfast in bed for years, so it would be a nice surprise. I will let you know if your suggestion worked.

your recipe looks trully looks delicious. I love pancakes! Too bad my mom is a vegetarian, doesn't munch any cheese & egg. I would probably cook it for everybody since my children are 5 yrs & 1 year old, hubby doesn't cook also. Thanks for the receipe. Have a wonderful Mother's Day!

Is that a tradition? Cool, i hope they have one for dad too. That surely is a very nice show of gesture in celebrating mothers day. We all do kinda expect it like we would a thanksgiving Americans would, & for Asians like me perhaps in the traditions of birthdays.
