My family is Italian and one of our favorite chefs is Mario Batali. Below I have put one of his simple, yet delicious recipes for one of my favorite pasta dishes....If you can't find broccoli rabe (which I love, but can be an aquired taste) you can substitute spinach or regular broccoli. Broccoli Rabe Sauce Mario Batali 3 tablespoons extra-virgin olive oil, plus 1 tablespoon, plus 1 tablespoon 1/2 large onion, cut into 1/2-inch dice 2 cloves garlic, thinly sliced 1 bunch broccoli rabe, tough stems removed (spinach or regular broccoli work ok too) Salt and freshly ground pepper 1/2 cup crushed tomatoes and their juices 1 pound pasta, cooked (pick your favorite shape!) Pinch chili flakes Romano cheese, for grating In a large saute pan heat 3 tablespoons olive oil over high heat. Add the onion, then the garlic. Let them get soft but not browned. Roughly chop the broccoli rabe and add to the pan. Season with salt and toss with the onions and garlic. Add 1/4 cup pasta cooking water and a splash of olive oil. Let cook for 2 minutes, then push to 1 side of the pan and add the tomatoes to the other side. Reduce the tomatoes for 2 minutes, then toss together with the broccoli rabe. Add cooked pasta, pinch of chili flakes, and a drizzle of olive oil. Grate some Romano onto the pasta and toss to coat for 1 minute. This is asimple yet delicious dish...and a great example of tradtitional Italian cooking.

How about trying this : Italian Ribs and Rice Yields: 6 servings With meat, vegetables and rice, here's a dish that can be a whole meal by itself. It'll satisfy the hunger of anyone at your table. INGREDIENTS: 3 pounds country style pork ribs 1 tablespoon vegetable oil 1 (14.5 ounce) can diced tomatoes, undrained 1 cup water 1 cup uncooked long grain rice 1 small green pepper, thinly sliced 1 garlic clove, minced 1 tablespoon sugar 2 teaspoons salt, divided 1/2 teaspoon Italian seasoning DIRECTIONS: 1. In a Dutch oven, brown ribs in oil over medium-high heat. Cover and cook over low heat for 1-1/4 hours, turning occasionally. Remove ribs and set aside; drain. In the same pan, bring tomatoes and water to a boil. Stir in the rice, green pepper, garlic, sugar, 1 teaspoon salt and Italian seasoning. Place ribs over rice; sprinkle with remaining salt. Cover and cook on low for 30 minutes or until rice is tender and meat juices run clear.

Preheat your grill. In a non stick skillet over medium heat melt a tablespoon of butter, add two cups of sliced mushrooms and a fourth cup of minced onions.Saute until the mushrooms are soften. Let cool. Mix one pound of ground chuck with hamburger seasoning and shape into eight patties. Spoon a heaping spoonful of mushroom mixture and a spoonful of shredded swiss cheese onto four patties. Place the remaining four patties on top of the other four, pinch the sides to seal in the filling. Flatten lightly. grill over medium heat for about five to six minutes on each side, or until fully cooked. Place on buns.
