cucumber

I love cucumber, love it on it's own with a bit of olive oil and salt or in salads with tomato or other leafy vetetables like lettuce etc. But I do love to experiment, are there any good recipes or ways to use cucumber you know or any easy dips or sauces you can make out of it?

This is an easy dip for you to try:
Cool Cucumber Dip
1 c Lowfat cottage cheese
1/2 md Cucumber; remove peel and cut into pieces
4 Radishes
2 Scallions with green tops
1 tb Fresh lemon juice or lime juice
1/4 ts Dried dill
1 ts Seasoned salt
1 ds Hot pepper sauce
In the container of a blender combine cottage cheese, cucumber, radishes, scallions, lemon or lime juice, dill, seasoned salt and hot pepper sauce. Process until smooth. Cover and chill. Makes about 1+1/2 cups.

I like cucumber as a pickles. My mother always make a mixed veggies pickles using cucumber as one of them. Here is the recipe for the pickles.
Ingredients
Cucumber - cut off the seed area, shredded
Carrot - shredded
Long red chili - shredded
Pineapple - cubes
some vineger
some salt to taste
some sugar
Preparation.
Mix all the ingredients well and taste the balance of the sugar and salt. Now you pickles are ready to eat and nice to have them together with some other dish like fried chicken or chicken curry and hot plain rice.

I love cucumbers with tomatoes, oil, and salt, like you mentioned. I also really like cucumber & onion salad:
2 cucumbers, peeled and thinly sliced
1 onion (Vidalia), thinly sliced
1/2 c. sour cream (I use soy sour cream or yogurt)
1 T cider vinegar
1 t. sugar
1/2 t. salt and dash of pepper
1/4 t. dried dill (or 1 T. fresh dill)
Mix all together. Chill at least 3 hours.

When I was pregnant I love cucumbers plain, or just with some salt. They were crisp and good, they made my hunger subside whenever I was really hungry.
