Peppermint Creams

Does anyone have a recipe for peppermint creams that is suitable for vegans?
My daughter is doing them in school this week and I want to provide her with vegan ingredients to take. All the recipes I have found have icing sugar in and the only icing sugar I found in the supermarket contained eggs.
Any suggestions would be gratefully recieved.

I have a recipe that uses powdered sugar. It is my understanding that powdered sugar is just granulated sugar that has been crushed to a powder with about 3% cornstarch added to keep it from clumping. You could use that instead of the icing sugar.
My recipe is
1 egg white (you could use an egg substitute, I guess)
3 cups powdered sugar
1tsp peppermint extract
In large bowl, whisk egg white until frothy, but not stiff. Stir in confectioners' sugar and peppermint extract. You may need to knead it with your hands. If you wish to add food coloring, knead it in, and keep kneading until the color is evenly distributed. Line a cookie sheet with parchment paper. Form the dough into small balls, place on cookie sheet and flatten slightly. Cover and let sit overnight in a cool, dry place, until set
I looked online for vegan variants, but I couldn't find any. However, www.veganessentials.com has organic, vegan powdered sugar (icing sugar). You can look for Hain Organic Powdered Sugar in your local grocery store, too. You can also make your own vegan powdered sugar by blending 2 cups unbleached cane/or white beet sugar with 1/2 cornstarch in a food processor until powdery. You could also use arrowroot instead of cornstarch.
