I had a sweet tooth the other night and I decided I would try my hand at making some cookies, I tried sugar cookies but they turned out like pancakes by the time they came out of the oven. I think I probly used a bit too much baking powder. I did however make some excellent peanut butter cookies: take one cup of sugar, one cup of peanut butter and one egg mix all together and drop one inch balls on a cookie sheet and flatten them out cook for 10 minutes and they are done. It was so simple I couldnt believe it try it out and tell me what you think, if you got any other cookie recipes that are pretty easy please list them below.

That's a good recipe for people allergic to wheat since it's flour/gluten-free. Date Macaroons 8 medium sized pitted dates 1 banana 1 1/2 cups coconut flakes Place ingredients in a food processor, and process until smooth. You may need to add more or less coconut to get the right consistency. Mixture should be moist, but not gooey. Bake at 325 degrees 10-15 minutes, until done. Cookies will be soft, but should cook enough to have a golden brown bottom and hold togther well.

Thanks for the reply. I remember now that you have said it that there is a recipe for sugar free cookies for people who are diabetic or are on the atkins diet that is made completely out of crushed nuts.

I made this exact recipe just a couple days ago. They are very good. To make them better you can press a chocolate kiss or chocolate star into the top prior to baking. Chocolate + peanut butter = YUMMY!!!!

I found that recipe on the back of the Kraft Peanut butter jar and was a little leary of it but went ahead and tried it anyways. Boy they were easy and quick. I don't think they were as good as the ones that are hard to make but they sure are easy and they taste good too. I recommended the recipe to my dad as he is a widower and loves cookies and these are easy enough for even him to cook.
