I am trying something new with squash....

I had some fresh squash and the only way we will eat it is sliced and fried or in a casserole (sometimes) and as squash fritters. In squash fritters, you boil the squash and then mash it up. Add flour and meal and an egg and salt and pepper to taste. If you want, you can add onion too, but I don't have any onion tonight. I got my squash boiled and mashed and all my ingredients mixed together. I usually fry them in my iron skillet into patties but tonight I am going to use my fry daddy and drop spoonfuls of the mixture in the grease to fry. I am going to try something new and add some shredded cheese. I hope this turns out as good as it sounds. I'll let you know.

This is going to sound silly but I'm going to ask anyway.. what is squash? Don't think I have ever heard or tried it before :)

It is the yellow summer squash not the butternut squash. I love the butternut squash in a casserole.

Wow, I am sitting here and my mouth is watering. I love squash but I never had squash fritters. I bet they taste wonderful. I usually boil it mash it add some milk or cream, salt pepper, some butter and a sprinkling of nutmeg. Then I put it in an ovenproof dish and bake it just until most of the liquid is absorbed. Good as a side dish with turkey dinner and anytime.

It sounds really good. I love squash! I like it best fried, but since that isn't the healthiest way to eat it, I often eat it boiled, with onions sliced in there for extra taste.

I just cannot bring myself to eat it boiled with onions. That is how my mama and daddy used to eat it. Thanks for posting.

To be honest, I can't even taste the onions. I know it is nutritious and they flavor the squash, but I can't tell a difference.

This is a very basic recipe that you might want to try. All you do is cook the squash with a yellow onion in butter, it taste much better with margarine though - b/c you can taste the sqaush and onions much better - than you could with butter. Give it a try sometimes.....my aunt used to make it...good stuff....good-luck.

I only eat squash in one way, since I have never tried any others I will now have to try them. I love squash. What I do is take my squash (usually acorn variety) wash the outside with water, then slice it in half. I clean out the seeds of course... I then take butter (has to be butter not margarine or any other type of spread)and coat the inside "meat" of the squash aquite liberally. I then take and pack it with brown sugar. I don't fill it up with brown sugar but I am liberal with it. Then I put it in a pan throw it in the oven at 325 (farenhiet) for anywhere from 35 minutes to 45 minutes depending on your oven. Then you take the squash out and eat the squash "meat" right out of the squash mmmmmmmm it is so yummy!

Yes I for one would like to know, sounds real good, my mouth is watering in fact, im trying to get more veggie recipes, I think I would cook it in the cast Iron, I like using cast Iron. some times when ive grown Squah -and cooked it up it has a bit of a bitter taste to it , am I picking it to soon?

Well if it is yellow you are not picking it too soon. Do you season it with salt, pepper and butter? I would think if it had a green tint to it , you were picking it too soon. thanks for posting.

Have you tried squash soup? That is really good too. Or even stuffed squash? I have a great and easy recipe for stuffed acorn squash if you want it. Just message me. I think I may try squash fritters. I have never had those but it sounds good. You may want to try grilling your squash too. You just slice them up lengthwise, coat with olive oil, sprinkle with sea salt and grill a few minutes per side. It is soooooo good.

i love squash. its a nice methos that you have written here. thanks for that. i have never ever tried, or to be more right, nevre eaten squash fritters. i donno, how they are made, or how do they taste. but i certainly would enjoy the way you have made it. thanx again my friend for that. it seems to be very easy. and i dont think that it will take much time too because it is so soft from inside that it cooks fast.

Sounds yummy! My favorite way to fix yellow squash or zucchini is, slice into medium thick slices, boil for 2 minutes in chicken broth, drain, spread out in baking pan, spread shredded sharp cheddar cheese over it, put under broiler til cheese melts. Yumsky!

From hearing what you have us i'm sure it would be very good! I like squash especially pumpkin and butter nut squash.I like the nutty taste and the sweetness mmmm ...i think i might want to get butter nut squash tomorrow at the store,i wanted to try your recipe it sounds so delicious to me..i'm drooling now...MMMmmmmm LOL
