I am having some friends over today after work. We all decided that we would prefer light snacks to munch on during the get together rather than eat a sit down meal. Since I have a bunch of vegetables that I bought at the outdoor market over the weekend, I thought that it would be nice to serve those with some dip.
Instead of making a sour cream based dip or hummus, I would like to make a white bean dip. I've done this in the past and have come up with some nice combinations. However, I was thinking that maybe there is something new that I could try and have never tried before.
Does anyone out there have some suggestions or recipes for a tasty bean dip that I could make tonight? I hope to use white (or cannelini) beans because those are my favorites. Any suggestions would be very much appreciated.
Thank you!

If you have some cilantro on hand you can try out this recipe...
INGREDIENTS
2 (15 ounce) cans cannellini beans, rinsed and drained
1/3 cup chopped fresh cilantro
3 cloves garlic, crushed or to taste
1/3 cup olive oil
1 1/2 lemons, juiced
salt and pepper to taste
DIRECTIONS
In a food processor, combine the cannellini beans, cilantro, garlic, olive oil and lemon juice. Process until smooth, or to your desired consistency. Taste, and season with salt and pepper.
